A festive winter cake made with layers of chocolate sponge, cream, and a hint of spice.

  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, followed by vanilla and buttermilk.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Pour the batter into prepared pans and bake for 25-30 minutes.
  7. Let cool completely before frosting.
  8. Whip the heavy cream with powdered sugar, cinnamon, and nutmeg until stiff peaks form.
  9. Layer the cooled cakes with whipped cream and serve.
