Delicious and moist sweet potato brownies that are rich in flavor and perfect for dessert.

Ingredients

  • 1 cup mashed sweet potatoes
  • 1/2 cup cocoa powder
  • 1/2 cup almond flour
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix mashed sweet potatoes, cocoa powder, almond flour, maple syrup, coconut oil, eggs, vanilla extract, baking soda, and salt until smooth.
  3. Fold in chocolate chips.
  4. Pour the batter into a greased baking dish.
  5. Bake for 25-30 minutes or until a toothpick comes out clean.
  6. Let cool before slicing into squares.

Notes

  • For a vegan option, substitute eggs with flax eggs.
  • These brownies can be stored in the fridge for up to a week.
