- 2 cups sauerkraut
- 1 pound smoked sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon caraway seeds
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- In a large pot, heat olive oil over medium heat.
- Add the onion and garlic, and sauté until translucent.
- Add the smoked sausage and cook until browned.
- Stir in the sauerkraut, chicken broth, caraway seeds, and black pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Serve hot, garnished with fresh herbs if desired.
Notes
