A hearty German soup with a tangy flavor from sauerkraut and rich ingredients.

Ingredients

  • 2 cups sauerkraut
  • 1 pound smoked sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon caraway seeds
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion and garlic, and sauté until translucent.
  3. Add the smoked sausage and cook until browned.
  4. Stir in the sauerkraut, chicken broth, caraway seeds, and black pepper.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Serve hot, garnished with fresh herbs if desired.

Notes

  • This soup can be made a day ahead and tastes even better the next day.
  • For a vegetarian version, substitute the sausage with a plant-based alternative.
  • Adjust the seasoning to taste, adding more salt if necessary.
