- 4 cups chicken or vegetable broth
- 2 tablespoons miso paste
- 2 packs fresh ramen noodles
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 2 green onions, sliced
- 1 soft-boiled egg, halved
- 1 cup baby spinach
- 1/2 cup corn
- 1/2 cup bean sprouts
- In a large pot, bring the broth to a simmer over medium heat.
- Add the miso paste and stir until dissolved.
- Cook the ramen noodles according to package instructions, then drain and set aside.
- Add soy sauce and sesame oil to the broth, stirring well.
- In serving bowls, place a portion of ramen noodles and ladle hot broth over them.
- Top with green onions, soft-boiled egg, spinach, corn, and bean sprouts.
