These traditional Swedish saffron buns, also known as Lussekatter, are a delightful treat enjoyed during the holiday season.

Ingredients

  • 0.5 teaspoons saffron threads
  • 1 cup warm milk
  • 0.25 cups sugar
  • 0.5 cups butter, melted
  • 1 package active dry yeast
  • 4 cups all-purpose flour
  • 0.5 teaspoons salt
  • 2 eggs
  • 1 egg yolk, for glaze
  • 0.25 cups raisins

Instructions

  1. Start by dissolving saffron threads in warm milk.
  2. Add sugar and melted butter, then mix in the yeast.
  3. Allow the mixture to sit for about 10 minutes until frothy.
  4. In a large bowl, combine flour and salt, then add the yeast mixture and eggs.
  5. Knead the dough until smooth and elastic.
  6. Let the dough rise in a warm place for about 1 hour.
  7. Preheat the oven to 375°F (190°C).
  8. Shape the dough into traditional Lussekatter forms (S shapes).
  9. Place on baking sheets and let rise again for 30 minutes.
  10. Brush with egg yolk and place raisins on top.
  11. Bake for 15-20 minutes until golden brown.
  12. Let cool before serving.

Notes

  • For a more intense saffron flavor, allow saffron to soak longer in the milk.
  • These cookies can be frozen and enjoyed later.
