A delicious and healthy lentil dish, perfect for any meal.

Ingredients

  • 1 cup red lentils
  • 4 cups water
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 can coconut milk
  • 1 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 tomato, diced

Instructions

  1. Rinse the lentils under cold water.
  2. In a pot, heat the vegetable oil over medium heat.
  3. Add onions and sauté until translucent.
  4. Add garlic, ginger, curry powder, and turmeric, and cook for 1 minute.
  5. Add lentils and water to the pot; bring to a boil.
  6. Reduce heat and simmer for 20-25 minutes until lentils are tender.
  7. Stir in coconut milk, salt, and lemon juice.
  8. Garnish with diced tomatoes before serving.
