- 1 cup red lentils
- 4 cups water
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 inch ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- 1 can coconut milk
- 1 teaspoon salt
- 1 tablespoon lemon juice
- 1 tomato, diced
- Rinse the lentils under cold water.
- In a pot, heat the vegetable oil over medium heat.
- Add onions and sauté until translucent.
- Add garlic, ginger, curry powder, and turmeric, and cook for 1 minute.
- Add lentils and water to the pot; bring to a boil.
- Reduce heat and simmer for 20-25 minutes until lentils are tender.
- Stir in coconut milk, salt, and lemon juice.
- Garnish with diced tomatoes before serving.
