A sweet and tangy lemon curd perfect for spreading on scones or using in desserts.

Ingredients

  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 4 large eggs
  • 1/2 cup unsalted butter, cut into pieces

Instructions

  1. In a saucepan, whisk together sugar, lemon juice, lemon zest, and eggs until smooth.
  2. Cook over medium heat, whisking constantly until the mixture thickens and coats the back of a spoon.
  3. Remove from heat and stir in butter until melted and smooth.
  4. Strain through a fine-mesh sieve into a bowl.
  5. Cover with plastic wrap pressed directly against the surface and chill in the refrigerator until set.

Notes

  • Great for filling tarts or as a topping for pancakes.
  • Store in the refrigerator for up to one week.
