- 1 cup granulated sugar
- 1/4 cup fresh lemon juice
- 2 tablespoons lemon zest
- 4 large eggs
- 1/2 cup unsalted butter, cut into pieces
- In a saucepan, whisk together sugar, lemon juice, lemon zest, and eggs until smooth.
- Cook over medium heat, whisking constantly until the mixture thickens and coats the back of a spoon.
- Remove from heat and stir in butter until melted and smooth.
- Strain through a fine-mesh sieve into a bowl.
- Cover with plastic wrap pressed directly against the surface and chill in the refrigerator until set.
