- 1 lb ground lamb
- 1 onion chopped
- 2 cloves garlic minced
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 tsp dried oregano
- 1 tsp cumin
- Salt and pepper to taste
- 1/2 cup plain yogurt
- 1 cucumber diced
- 1/4 cup fresh parsley chopped
- In a large pot, brown ground lamb over medium heat.
- Add onion and garlic, sauté until onion is translucent.
- Mix in chicken broth, diced tomatoes, oregano, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in cucumber and parsley.
- Serve hot, topped with a dollop of yogurt.
Notes
- This soup can be made ahead of time and stored in the fridge for up to 3 days.
- For extra flavor, add a splash of lemon juice before serving.
