A delicious and hearty gyros soup that brings the flavors of Greece to your table.

Ingredients

  • 1 lb ground lamb
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1/2 cup plain yogurt
  • 1 cucumber diced
  • 1/4 cup fresh parsley chopped

Instructions

  1. In a large pot, brown ground lamb over medium heat.
  2. Add onion and garlic, sauté until onion is translucent.
  3. Mix in chicken broth, diced tomatoes, oregano, cumin, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Stir in cucumber and parsley.
  6. Serve hot, topped with a dollop of yogurt.

Notes

  • This soup can be made ahead of time and stored in the fridge for up to 3 days.
  • For extra flavor, add a splash of lemon juice before serving.
