Protein pancakes that are fluffy and delicious, perfect for a healthy breakfast.

Ingredients

  • 1 cup oats
  • 1 cup cottage cheese
  • 4 eggs
  • 1 tablespoon honey
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 pinch salt

Instructions

  1. In a blender, combine oats, cottage cheese, eggs, honey, baking powder, cinnamon, and salt.
  2. Blend until smooth.
  3. Heat a non-stick skillet over medium heat and add a little oil if necessary.
  4. Pour batter onto the skillet for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Repeat with the remaining batter.
  7. Serve with your favorite toppings.

Notes

  • For a sweeter taste, add more honey or maple syrup.
  • These pancakes can be frozen and reheated later.
