- 2 pounds Yukon Gold potatoes
- 1 cup heavy cream
- 1/2 cup unsalted butter
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shallots, thinly sliced
- 1/4 cup all-purpose flour
- 1/4 cup vegetable oil
- Peel and cut the potatoes into chunks. Boil in salted water until tender, about 20 minutes.
- In a saucepan, heat the cream and butter together until melted and warm.
- Drain the potatoes and return to the pot. Mash with heated cream mixture, garlic powder, salt, and pepper until smooth.
- In a skillet, heat oil over medium heat. Add shallots and cook until golden and crispy, about 5-7 minutes. Remove and drain on paper towels.
- Serve the mashed potatoes topped with crispy shallots.
Notes
- For extra flavor, add cream cheese to the potatoes.
- Ensure shallots are thinly sliced for even cooking.
