Deliciously creamy mashed potatoes topped with crispy shallots for a perfect side dish.

Ingredients

  • 2 pounds Yukon Gold potatoes
  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shallots, thinly sliced
  • 1/4 cup all-purpose flour
  • 1/4 cup vegetable oil

Instructions

  1. Peel and cut the potatoes into chunks. Boil in salted water until tender, about 20 minutes.
  2. In a saucepan, heat the cream and butter together until melted and warm.
  3. Drain the potatoes and return to the pot. Mash with heated cream mixture, garlic powder, salt, and pepper until smooth.
  4. In a skillet, heat oil over medium heat. Add shallots and cook until golden and crispy, about 5-7 minutes. Remove and drain on paper towels.
  5. Serve the mashed potatoes topped with crispy shallots.

Notes

  • For extra flavor, add cream cheese to the potatoes.
  • Ensure shallots are thinly sliced for even cooking.
