This moist and flavorful Carrot Cake Gugelhupf is a perfect dessert for any occasion, combining the sweetness of carrots with warm spices and nuts.

  • 2 cups grated carrots
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts
  • 1/2 cup raisins

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the grated carrots, granulated sugar, brown sugar, and vegetable oil.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the walnuts and raisins.
  7. Pour the batter into a greased Gugelhupf pan.
  8. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For added flavor, you can add crushed pineapple or coconut to the batter.
  • This cake can be served plain, or topped with cream cheese frosting.
