The cachapas are a traditional Venezuelan dish made with fresh corn, often enjoyed for breakfast or as a snack.

Ingredients

  • 2 cups fresh corn kernels
  • 1/2 cup milk
  • 1 egg
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup cornmeal
  • 2 tablespoons melted butter
  • cheese (to taste, for serving)

Instructions

  1. In a blender, combine the corn kernels, milk, egg, sugar, and salt until smooth.
  2. Gradually add the cornmeal and mix until well combined.
  3. Heat a non-stick skillet over medium heat and add a bit of melted butter.
  4. Pour in a scoop of the batter and cook until the edges start to brown, then flip and cook the other side.
  5. Repeat with the remaining batter.
  6. Serve warm with cheese on top.

Notes

  • For a richer flavor, use fresh cheese or queso blanco.
  • These can also be served with avocado or sour cream.
