Borschtsch is a traditional Eastern European soup known for its deep red color and earthy flavor, often made with beets and served hot.

Ingredients

  • 2 medium beets
  • 1 large onion
  • 2 cloves garlic
  • 1 large carrot
  • 1 medium potato
  • 1/2 head cabbage
  • 6 cups vegetable broth
  • 2 tablespoons tomato paste
  • 1 tablespoon vinegar
  • 1 tablespoon sugar
  • Salt to taste
  • Black pepper to taste
  • Fresh dill for garnish

Instructions

  1. Peel and shred the beets, then sauté them in a large pot with some oil until they begin to soften.
  2. Add chopped onion and minced garlic, and cook until the onion is translucent.
  3. Add diced carrots and potatoes, stirring for a few minutes.
  4. Stir in the shredded cabbage and cook for a couple of minutes.
  5. Add the vegetable broth, tomato paste, vinegar, and sugar. Bring to a boil, then reduce heat and simmer for about 30-40 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh dill.

Notes

  • For a richer flavor, you can add bay leaves while simmering.
  • Serving with sour cream is traditional.
  • Beets can stain; be careful while handling.
