Bauerntopf is a hearty German stew traditionally made with meat, potatoes, and various vegetables.

Ingredients

  • 500 grams beef, cut into cubes
  • 300 grams potatoes, peeled and diced
  • 200 grams carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 750 ml beef broth
  • 2 tablespoons vegetable oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 100 grams green beans, trimmed

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sauté until translucent.
  3. Add the beef cubes and brown on all sides.
  4. Stir in the paprika, salt, and black pepper.
  5. Add the diced potatoes, sliced carrots, and green beans.
  6. Pour in the beef broth and add the bay leaf.
  7. Bring to a boil, then reduce heat and simmer for about 1.5 hours, or until the meat and vegetables are tender.
  8. Remove the bay leaf and serve hot.

Notes

  • Feel free to add other vegetables like peas or corn.
  • This dish is perfect for a cozy family meal.
  • Leftovers can be refrigerated and reheated easily.
